Wild Carrot (Daucus carota)
I love the smell of Wild Carrot, carrot like with hints of poison hemlock, a high pitched scent with a spicy undertone.
Have you laid amongst the wild carrot fields or pathways, and watched the insects flit from flower to flower and see the silhouette of their lacy flowers against the blue sky? It’s a beautiful thing.
It feels ancient eating the root, the original carrot that was once the only carrot we knew. It’s sweet, small and strong in flavour and I love to grate them on foods or eat them dug straight from the soil with the earth still clinging to their skin.
